炸醬麵
好久沒做這個喔～在台灣做過幾次，在法國因為一直沒看到合適的醬，也沒想到要做。因為其實其中要加的不辣豆瓣醬，連在台灣也不是太好找，至少普通超市沒有，都要去傳統市場買。如果是裝罐的，還不一定會好吃，有時候很死鹹。小時候媽媽都是去永和六合市場裡面一家賣醬料蔭瓜的店買，稱重的。那家的豆瓣不會太鹹，做起來很剛好。因為這東西一做勢必一大鍋，那時常常週末都吃炸醬麵看小胖歷險記，很過癮。因為媽媽做的很好吃，後來我吃炸醬麵就很挑。印象中吃過最好吃的，是在興隆市場對面一個麵攤，醬很濃，卻有一股自然的甜味，不會太鹹，醬也就可以放多，很有料，但後來搬家就沒再去了，店也不知還在不在。此外，當然是藍調的炸醬麵，小時候沒錢，但喝啤酒一定得配炸醬麵，一碗一百多塊卻都花得不會心疼。
出國後就只能吃維力炸醬麵了，但近來我的胃和我過不去，每吃台式泡麵必胃酸，吃韓式的就不會，真可惜了。
那天生平第一次去Belleville，在帶路饕客的引介下，買了豆瓣醬與甜麵醬。哇，我在巴黎都還沒看過耶！今天終於去買了豆干、絞肉回來煮了，喔好好吃喔！以後真的不用再寄維力了～～自己超感動的哩！好香好香，不小心麵又多吃了一大碗。

嘿嘿，我小時候就聽 loulou 說過作法囉，真的很簡單，我一直都記得，出國後也常做。有一次離開台北前去朋友家吃飯，那天出運，朋友的媽媽那個下午剛剛自己做了不辣的炸醬，就很仔細的用密封罐包好讓我帶來，加上這邊買的到的岡山辣豆瓣醬（loulou 以前說用哈哈辣豆瓣，這裡也是買的到啦，不過我喜歡岡山辣豆瓣..），每次吃都覺得很幸福
是滴，我贊成加黃瓜絲，至少也要有蔥花。以前在中研院工作時附近有家麵店有一種ㄅ一ㄤ、ㄅ一ㄤ、麵，其實就是在麵上加一半的蕃茄炒蛋和一半的炸醬（最好是再加上真正會辣的辣椒），顏色好看而且也顧及營養均衡，下次 loulou 也可以試試。我有照片： http://www.flickr.com/photos/91489609@N00/270777812/
